台灣名廚 阿基師：「要在人前露臉，就要在背後受罪。」

好比國宴級菜餚的擺盤、刀工、調味，是廚師數十年的累積，阿基師如今呈現的廚藝以及圓融的待人處世，也是從四十年前開始在廚房中磨出來的。

國中畢業就到飯店當學徒的阿基師，卻有個致命傷──身材矮小。因為廚房工作粗重，人高馬大的學徒比較有機會受師傅青睞，而有「出師」機會，平均三年六個月就可以升為師傅的助手，阿基師一等卻是八年之久。當時，「我最多就是煮七、八十人的員工餐。」

想學廚藝？「你要自己找碗洗、主動找事情做，讓師傅喜歡你，」阿基師指著手上傷疤、脖子上不同色的皮膚說道，就算切傷手指，他把火柴盒摩擦片當OK繃包裹傷口，照常洗碗；有一次他搬著幾乎是自己身高大小的滾燙粥桶不小心跌倒，熱粥灑出來了被罵不說，連脖子被燙到脫皮，他還是繼續工作，直到晚上十點下班回家，才被母親抓去看醫生。
